Mediterranean Comfort Bowl

Ingredients:

  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 Fresh eggplant, diced
  • 1 cup Canned chickpeas, rinsed and drained
  • 2 Fresh vine ripe tomatoes, diced
  • 1 cup Spinach leaves, roughly chopped
  • 2 teaspoons Greek style lemon and herbs seasoning
  • Salt and pepper to taste
  • 1 cup Feta cheese, crumbled
  • as needed Fresh parsley, chopped as garnish

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat. Add garlic, sauté for 1-2 minutes until fragrant.
  2. 2. Add the diced eggplant to the skillet, cook until softened and browned - around 10 minutes.
  3. 3. Mix in the chickpeas, tomatoes, chopped spinach and seasonings. Cook for another 10-15 minutes, stirring occasionally.
  4. 4. Adjust the salt and pepper according to taste.
  5. 5. Divide the cooked mixture into two bowls and sprinkle with crumbled feta cheese.
  6. 6. Garnish with fresh parsley and serve warm, enjoy your comforting Mediterranean lunch!
