
Mediterranean Comfort Bowl

Ingredients:
- 2 tablespoons Olive oil
- 2 Garlic cloves, minced
- 1 Fresh eggplant, diced
- 1 cup Canned chickpeas, rinsed and drained
- 2 Fresh vine ripe tomatoes, diced
- 1 cup Spinach leaves, roughly chopped
- 2 teaspoons Greek style lemon and herbs seasoning
- Salt and pepper to taste
- 1 cup Feta cheese, crumbled
- as needed Fresh parsley, chopped as garnish
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat. Add garlic, sauté for 1-2 minutes until fragrant.
- 2. Add the diced eggplant to the skillet, cook until softened and browned - around 10 minutes.
- 3. Mix in the chickpeas, tomatoes, chopped spinach and seasonings. Cook for another 10-15 minutes, stirring occasionally.
- 4. Adjust the salt and pepper according to taste.
- 5. Divide the cooked mixture into two bowls and sprinkle with crumbled feta cheese.
- 6. Garnish with fresh parsley and serve warm, enjoy your comforting Mediterranean lunch!
