Mediterranean Chickpea Stew

Ingredients:

  • 2 tbsp Olive oil
  • 1 large, diced Yellow onion
  • 2 finely minced Garlic cloves
  • 2 cups, drained and rinsed Canned chickpeas
  • 2 cups Crushed tomatoes
  • 1.5 cups Vegetable broth
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 2 cups Fresh spinach leaves
  • to taste Feta cheese
  • for serving optional Fresh lemon juice

Instructions:

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion to the pot and cook until translucent, about 5 minutes. Then, add the garlic and spices (paprika and cumin), and stir until fragrant.
  3. 3. Add the chickpeas, tomatoes, and vegetable broth to the pot. Bring the mixture to a boil.
  4. 4. Simmer the stew for 15 minutes over low heat to allow the flavors to blend together.
  5. 5. Stir in the spinach until wilted. Adjust the seasoning if necessary.
  6. 6. Serve it hot, garnished with feta cheese and a squeeze of fresh lemon juice if desired.
