
Mediterranean Chickpea Stew

Ingredients:
- 2 tbsp Olive oil
- 1 large, diced Yellow onion
- 2 finely minced Garlic cloves
- 2 cups, drained and rinsed Canned chickpeas
- 2 cups Crushed tomatoes
- 1.5 cups Vegetable broth
- 1 tsp Paprika
- 1 tsp Ground cumin
- 2 cups Fresh spinach leaves
- to taste Feta cheese
- for serving optional Fresh lemon juice
Instructions:
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add onion to the pot and cook until translucent, about 5 minutes. Then, add the garlic and spices (paprika and cumin), and stir until fragrant.
- 3. Add the chickpeas, tomatoes, and vegetable broth to the pot. Bring the mixture to a boil.
- 4. Simmer the stew for 15 minutes over low heat to allow the flavors to blend together.
- 5. Stir in the spinach until wilted. Adjust the seasoning if necessary.
- 6. Serve it hot, garnished with feta cheese and a squeeze of fresh lemon juice if desired.
