
Mediterranean Chickpea Salad Pita Pockets

Ingredients:
- 1 can (15 ounces) canned chickpeas
- 1 whole cucumber
- 2 whole tomatoes
- 1 small red onion
- 0.25 cup fresh parsley
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 4 whole pita bread
- to taste salt and pepper
Instructions:
- Rinse and drain the chickpeas.
- Dice the cucumber, tomatoes, and onion.
- Chop the parsley.
- Combine the chickpeas, cucumber, tomatoes, onion, and parsley in a bowl.
- Add the olive oil and lemon juice, then season with salt and pepper.
- Stir everything together until well mixed.
- Cut each pita in half and open the pockets.
- Divide the salad mixture evenly among the pita pockets.
- Serve immediately, or refrigerate until ready to eat.
