Mediterranean Chickpea Salad Pita Pockets

Ingredients:

  • 1 can (15 ounces) canned chickpeas
  • 1 whole cucumber
  • 2 whole tomatoes
  • 1 small red onion
  • 0.25 cup fresh parsley
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 4 whole pita bread
  • to taste salt and pepper

Instructions:

  1. Rinse and drain the chickpeas.
  2. Dice the cucumber, tomatoes, and onion.
  3. Chop the parsley.
  4. Combine the chickpeas, cucumber, tomatoes, onion, and parsley in a bowl.
  5. Add the olive oil and lemon juice, then season with salt and pepper.
  6. Stir everything together until well mixed.
  7. Cut each pita in half and open the pockets.
  8. Divide the salad mixture evenly among the pita pockets.
  9. Serve immediately, or refrigerate until ready to eat.
