Mediterranean Chickpea Salad

Ingredients:

  • 1 can (15 ounces) Canned Chickpeas
  • 1 piece English cucumber
  • 1 cup Cherry tomatoes
  • 1 small red onion
  • 1/2 cup Feta cheese
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1/4 cup Fresh parsley
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Drain and rinse the canned chickpeas.
  2. Dice the cucumber, cherry tomatoes, and red onion into small, bite-sized pieces.
  3. Crumble the feta cheese.
  4. In a large bowl, combine the chickpeas, cucumber, tomatoes, onion, and feta cheese.
  5. In a separate bowl, whisk together the lemon juice, olive oil, fresh parsley, dried oregano, salt, and black pepper to make the dressing.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve the salad immediately, or refrigerate it for later. It can be served on its own as a light main course, or as a side dish.
