
Mediterranean Chickpea Salad

Ingredients:
- 1 can (15 ounces) Canned Chickpeas
- 1 piece English cucumber
- 1 cup Cherry tomatoes
- 1 small red onion
- 1/2 cup Feta cheese
- 2 tablespoons Lemon juice
- 3 tablespoons Olive oil
- 1/4 cup Fresh parsley
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
Instructions:
- Drain and rinse the canned chickpeas.
- Dice the cucumber, cherry tomatoes, and red onion into small, bite-sized pieces.
- Crumble the feta cheese.
- In a large bowl, combine the chickpeas, cucumber, tomatoes, onion, and feta cheese.
- In a separate bowl, whisk together the lemon juice, olive oil, fresh parsley, dried oregano, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Serve the salad immediately, or refrigerate it for later. It can be served on its own as a light main course, or as a side dish.
