Mediterranean Chicken Tagine

Ingredients:

  • 4 pieces Chicken thighs
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 piece Onion
  • 2 pieces Carrots
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cumin
  • 1 teaspoon Seasoned salt
  • 0.5 teaspoon Ground black pepper
  • 14.5 ounces Canned diced tomatoes
  • 1 cup Prunes
  • 2 cups Chicken broth
  • handful Cilantro

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the chicken thighs to the pot and sear on both sides. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the garlic and onion. Cook until the onions are translucent.
  3. Add the carrots to the pot and sauté for a few minutes. Then, sprinkle the cinnamon, cumin, seasoned salt, and black pepper over the vegetables and stir to mix.
  4. Return the chicken to the pot, and add the diced tomatoes, prunes, and chicken broth. Bring the mixture to a boil, then cover and reduce heat to low.
  5. Let the tagine simmer for 1 hour 15 minutes. If the tagine gets too thick, add a little more chicken broth or water.
  6. Serve the tagine hot. Garnish with fresh cilantro for a pop of color and extra flavor.
