
Mediterranean Cauliflower Rice Bowl

Ingredients:
- 1 bag (12 oz) Cauliflower Rice
- 2 tbsp Olive Oil
- 1 medium, finely chopped Onion
- 2 cloves, minced Garlic
- 1 medium, chopped Bell Pepper
- 1 cup Cherry Tomatoes
- 1/4 cup, crumbled Feta Cheese
- 1/4 cup, chopped Parsley
- 1/4 cup, sliced Black Olives
- 1/2 medium, sliced Cucumber
- 1 juice Lemon
- to taste Salt
- to taste Black Pepper
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add chopped onion and garlic, cook until they start to soften, about 3-5 minutes.
- Add in the cauliflower rice, bell pepper, cherry tomatoes, cook stirring frequently for 5-7 minutes, until the cauliflower rice is tender.
- Season with salt and pepper. Squeeze the juice of the lemon into the skillet and mix well.
- Turn off the heat, add the feta cheese, parsley, black olives, and cucumber into the skillet, mix well.
- Serve immediately, garnish with additional feta cheese and parsley, if desired.
