Mediterranean Cauliflower Rice Bowl

Ingredients:

  • 1 bag (12 oz) Cauliflower Rice
  • 2 tbsp Olive Oil
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 medium, chopped Bell Pepper
  • 1 cup Cherry Tomatoes
  • 1/4 cup, crumbled Feta Cheese
  • 1/4 cup, chopped Parsley
  • 1/4 cup, sliced Black Olives
  • 1/2 medium, sliced Cucumber
  • 1 juice Lemon
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chopped onion and garlic, cook until they start to soften, about 3-5 minutes.
  3. Add in the cauliflower rice, bell pepper, cherry tomatoes, cook stirring frequently for 5-7 minutes, until the cauliflower rice is tender.
  4. Season with salt and pepper. Squeeze the juice of the lemon into the skillet and mix well.
  5. Turn off the heat, add the feta cheese, parsley, black olives, and cucumber into the skillet, mix well.
  6. Serve immediately, garnish with additional feta cheese and parsley, if desired.
