Mediterranean Breakfast Shrimp & Tomato Skillet

Ingredients:

  • 2 tbsp Olive Oil
  • 2 cloves Garlic Cloves
  • 200 grams Medium Shrimp, shelled and deveined
  • 1 cup Cherry Tomatoes
  • 0.5 cup Feta Cheese
  • 4 large size Eggs
  • 2 tbsp Fresh Dill, chopped
  • To taste Salt and Black Pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and cook until fragrant. Add the shrimp and cook until pink.
  3. Add the cherry tomatoes to the skillet and stir until they start to burst.
  4. Crumble the feta cheese over the top of the shrimp and tomatoes.
  5. Crack the eggs over the top of the skillet. Cover and cook until the egg whites are set.
  6. Sprinkle with fresh dill and season with salt and pepper to taste.
  7. Remove from heat and serve immediately.
