
Mediterranean Breakfast Shrimp & Tomato Skillet

Ingredients:
- 2 tbsp Olive Oil
- 2 cloves Garlic Cloves
- 200 grams Medium Shrimp, shelled and deveined
- 1 cup Cherry Tomatoes
- 0.5 cup Feta Cheese
- 4 large size Eggs
- 2 tbsp Fresh Dill, chopped
- To taste Salt and Black Pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook until fragrant. Add the shrimp and cook until pink.
- Add the cherry tomatoes to the skillet and stir until they start to burst.
- Crumble the feta cheese over the top of the shrimp and tomatoes.
- Crack the eggs over the top of the skillet. Cover and cook until the egg whites are set.
- Sprinkle with fresh dill and season with salt and pepper to taste.
- Remove from heat and serve immediately.
