
Mediterranean Breakfast Rice Bowl

Ingredients:
- 1 cup Rice
- 1 tablespoon Olive oil
- 1 cup Fresh vegetables (tomatoes, cucumber, bell peppers)
- 1/2 cup Feta cheese
- 1/4 cup Olives
- 2 Eggs
- to taste Fresh herbs (dill, parsley)
- to taste Salt and pepper
Instructions:
- Cook the rice as per instructions on the package and set aside.
- While the rice is cooking, cut the vegetables and set aside.
- In a skillet, heat the olive oil over medium heat.
- Crack the eggs into the skillet, season with salt and pepper, and fry until desired doneness.
- Divide the rice into two bowls.
- Top with the fresh vegetables, feta cheese, olives, and fried egg.
- Sprinkle with fresh herbs, add additional salt and pepper if desired, and serve hot.
