Mediterranean Breakfast Rice Bowl

Ingredients:

  • 1 cup Rice
  • 1 tablespoon Olive oil
  • 1 cup Fresh vegetables (tomatoes, cucumber, bell peppers)
  • 1/2 cup Feta cheese
  • 1/4 cup Olives
  • 2 Eggs
  • to taste Fresh herbs (dill, parsley)
  • to taste Salt and pepper

Instructions:

  1. Cook the rice as per instructions on the package and set aside.
  2. While the rice is cooking, cut the vegetables and set aside.
  3. In a skillet, heat the olive oil over medium heat.
  4. Crack the eggs into the skillet, season with salt and pepper, and fry until desired doneness.
  5. Divide the rice into two bowls.
  6. Top with the fresh vegetables, feta cheese, olives, and fried egg.
  7. Sprinkle with fresh herbs, add additional salt and pepper if desired, and serve hot.
