
Mediterranean Breakfast Quiche

Ingredients:
- 2 tbsp Olive oil
- 1 Red bell pepper, chopped
- 1 Red onion, chopped
- 2 cloves Garlic, minced
- 2 cups Spinach
- 6 Eggs
- 0.5 cup Feta cheese
- 0.25 cup Kalamata olives, chopped
- 1 tsp Oregano
- To taste Salt and Pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the bell pepper and onion and cook until tender.
- Add the minced garlic to the skillet and cook for another minute.
- Add the spinach to the skillet and cook until wilted. Remove the skillet from heat.
- In a large bowl, whisk together the eggs, feta cheese, olives, oregano, salt, and pepper.
- Stir in the cooked vegetables. Pour the mixture into a greased pie dish.
- Bake for 35-40 minutes, or until the quiche is set and lightly browned on top.
- Let the quiche cool for a few minutes before slicing and serving.
