Mediterranean Breakfast Quiche

Ingredients:

  • 2 tbsp Olive oil
  • 1 Red bell pepper, chopped
  • 1 Red onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Spinach
  • 6 Eggs
  • 0.5 cup Feta cheese
  • 0.25 cup Kalamata olives, chopped
  • 1 tsp Oregano
  • To taste Salt and Pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the bell pepper and onion and cook until tender.
  3. Add the minced garlic to the skillet and cook for another minute.
  4. Add the spinach to the skillet and cook until wilted. Remove the skillet from heat.
  5. In a large bowl, whisk together the eggs, feta cheese, olives, oregano, salt, and pepper.
  6. Stir in the cooked vegetables. Pour the mixture into a greased pie dish.
  7. Bake for 35-40 minutes, or until the quiche is set and lightly browned on top.
  8. Let the quiche cool for a few minutes before slicing and serving.
