
Mediterranean Breakfast Pasta

Ingredients:
- 200 grams Whole wheat spaghetti
- 2 tbsp Olive oil
- 2 cloves Garlic
- 1 cup Cherry tomatoes
- 2 cups Spinach
- 1/2 cup Feta cheese
- 4 large Eggs
- to taste Salt and Pepper
Instructions:
- 1. Cook the whole wheat spaghetti according to the package instructions, then drain and set aside.
- 2. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.
- 3. Add the cherry tomatoes and cook for another 2-3 minutes, until they start to soften.
- 4. Add the spinach and cook for another 2-3 minutes, until it wilts.
- 5. Remove the vegetables from the pan and toss them with the cooked pasta. Season with salt and pepper to taste.
- 6. In the same pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook to your desired level of doneness.
- 7. Divide the pasta among four plates. Top each with a fried egg and sprinkle with the feta cheese.
