Mediterranean Breakfast Pasta

Ingredients:

  • 200 grams Whole wheat spaghetti
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • 1/2 cup Feta cheese
  • 4 large Eggs
  • to taste Salt and Pepper

Instructions:

  1. 1. Cook the whole wheat spaghetti according to the package instructions, then drain and set aside.
  2. 2. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.
  3. 3. Add the cherry tomatoes and cook for another 2-3 minutes, until they start to soften.
  4. 4. Add the spinach and cook for another 2-3 minutes, until it wilts.
  5. 5. Remove the vegetables from the pan and toss them with the cooked pasta. Season with salt and pepper to taste.
  6. 6. In the same pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook to your desired level of doneness.
  7. 7. Divide the pasta among four plates. Top each with a fried egg and sprinkle with the feta cheese.
