
Mediterranean Breakfast Frittata

Ingredients:
- 8 units Eggs
- 2 tablespoons Olive oil
- 1 unit Red bell pepper
- 1 unit Onion
- 2 units Garlic cloves
- 1 cup Cherry tomatoes
- 2 cups Spinach
- 0.5 cup Feta cheese
- To Taste Salt and pepper
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Beat eggs in a bowl and season with salt and pepper.
- Heat olive oil in a large, oven-safe skillet over medium heat. Add the diced onion and red bell pepper to the pan and cook until softened. Add the minced garlic and cook for another minute.
- Add the cherry tomatoes and spinach to the skillet and cook until the spinach is wilted.
- Pour the beaten eggs over the vegetables in the skillet. Sprinkle the feta cheese on top.
- Place the skillet in the oven and bake for 15-20 minutes, or until the eggs are set and the feta is slightly golden. Be sure to watch closely to avoid overcooking.
