Mediterranean Breakfast Frittata

Ingredients:

  • 8 units Eggs
  • 2 tablespoons Olive oil
  • 1 unit Red bell pepper
  • 1 unit Onion
  • 2 units Garlic cloves
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • 0.5 cup Feta cheese
  • To Taste Salt and pepper

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Beat eggs in a bowl and season with salt and pepper.
  3. Heat olive oil in a large, oven-safe skillet over medium heat. Add the diced onion and red bell pepper to the pan and cook until softened. Add the minced garlic and cook for another minute.
  4. Add the cherry tomatoes and spinach to the skillet and cook until the spinach is wilted.
  5. Pour the beaten eggs over the vegetables in the skillet. Sprinkle the feta cheese on top.
  6. Place the skillet in the oven and bake for 15-20 minutes, or until the eggs are set and the feta is slightly golden. Be sure to watch closely to avoid overcooking.
