
Mediterranean Breakfast Fish Tacos

Ingredients:
- 2 pieces White fish fillets
- 4 pieces Whole grain tortillas
- 1 piece Avocado
- 0.5 piece Red onion
- 1 cup Cherry tomatoes
- 1 tablespoon Fresh lime juice
- 1 tablespoon Fresh cilantro
- 2 tablespoons Olive oil
- to taste Sea salt
- to taste Pepper
Instructions:
- Brush both sides of the fish with olive oil, then season with salt and pepper.
- Heat a grill pan or outdoor grill to medium-high heat, and grill fish for 3-4 minutes on each side or until fish is opaque and can easily be flaked with a fork.
- Meanwhile, to prepare the avocado salsa, combine the avocado, onion, cherry tomatoes, cilantro, lime juice, and a sprinkle of salt and pepper in a bowl. Stir until well combined.
- Once fish is cooked, allow it to cool for few minutes before flaking it with a fork.
- To serve, warm the whole grain tortillas in a pan over medium heat. Then top each tortilla with flaky grilled fish, avocado salsa, and serve immediately.
