Mediterranean Breakfast Fish Tacos

Ingredients:

  • 2 pieces White fish fillets
  • 4 pieces Whole grain tortillas
  • 1 piece Avocado
  • 0.5 piece Red onion
  • 1 cup Cherry tomatoes
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Fresh cilantro
  • 2 tablespoons Olive oil
  • to taste Sea salt
  • to taste Pepper

Instructions:

  1. Brush both sides of the fish with olive oil, then season with salt and pepper.
  2. Heat a grill pan or outdoor grill to medium-high heat, and grill fish for 3-4 minutes on each side or until fish is opaque and can easily be flaked with a fork.
  3. Meanwhile, to prepare the avocado salsa, combine the avocado, onion, cherry tomatoes, cilantro, lime juice, and a sprinkle of salt and pepper in a bowl. Stir until well combined.
  4. Once fish is cooked, allow it to cool for few minutes before flaking it with a fork.
  5. To serve, warm the whole grain tortillas in a pan over medium heat. Then top each tortilla with flaky grilled fish, avocado salsa, and serve immediately.
