Mediterranean Breakfast Fish Skillet

Ingredients:

  • 4 pieces White Fish Fillets
  • 2 tablespoons Olive Oil
  • 1 piece Onion
  • 2 pieces Garlic Cloves
  • 4 pieces Fresh Tomatoes
  • 1 cup Kalamata Olives
  • 2 tablespoons Capers
  • 2 tablespoons Fresh Parsley
  • 2 tablespoons Freshly Squeezed Lemon Juice
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the onions, and sauté until they're soft and translucent, about 5 minutes.
  2. Add the garlic to the skillet, and continue to sauté for another minute.
  3. Place the fish fillets on top of the onions in the skillet, and cook for about 4-5 minutes on each side, until the fish is cooked through and easily flaked with a fork.
  4. While the fish is cooking, chop the tomatoes, olives, and parsley.
  5. When the fish is fully cooked, add the chopped tomatoes, olives, and capers to the skillet. Stir well to combine, and cook for another 2-3 minutes, until the tomatoes are soft.
  6. Drizzle the lemon juice over the top of the fish and vegetables, and sprinkle with the fresh parsley. Season with salt and pepper to taste.
  7. Serve the Mediterranean fish skillet hot, straight from the skillet, for a nutritious and filling breakfast.
