
Mediterranean Breakfast Fish Skillet

Ingredients:
- 4 pieces White Fish Fillets
- 2 tablespoons Olive Oil
- 1 piece Onion
- 2 pieces Garlic Cloves
- 4 pieces Fresh Tomatoes
- 1 cup Kalamata Olives
- 2 tablespoons Capers
- 2 tablespoons Fresh Parsley
- 2 tablespoons Freshly Squeezed Lemon Juice
- to taste Salt
- to taste Black Pepper
Instructions:
- In a large skillet, heat the olive oil over medium-high heat. Add the onions, and sauté until they're soft and translucent, about 5 minutes.
- Add the garlic to the skillet, and continue to sauté for another minute.
- Place the fish fillets on top of the onions in the skillet, and cook for about 4-5 minutes on each side, until the fish is cooked through and easily flaked with a fork.
- While the fish is cooking, chop the tomatoes, olives, and parsley.
- When the fish is fully cooked, add the chopped tomatoes, olives, and capers to the skillet. Stir well to combine, and cook for another 2-3 minutes, until the tomatoes are soft.
- Drizzle the lemon juice over the top of the fish and vegetables, and sprinkle with the fresh parsley. Season with salt and pepper to taste.
- Serve the Mediterranean fish skillet hot, straight from the skillet, for a nutritious and filling breakfast.
