Mediterranean Breakfast Egg Skillet

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Olive Oil
  • 1 whole, diced Red Bell Pepper
  • 1 whole, diced Yellow Onion
  • 2 cloves, minced Garlic Cloves
  • 1 cup halved Cherry Tomatoes
  • 2 cups, packed Spinach Leaves
  • 1/2 cup crumbled Feta Cheese
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. 1. Heat olive oil in a large non-stick skillet over medium heat.
  2. 2. Add diced bell pepper and onion to the skillet and cook until softened.
  3. 3. Stir in minced garlic and halved cherry tomatoes. Continue to cook until tomatoes are slightly softened.
  4. 4. Add spinach leaves, and cook until just wilted.
  5. 5. Make four wells in the vegetable mixture and crack an egg into each well.
  6. 6. Cover the skillet and cook until the egg whites are set. You can cook longer if you prefer your yolk fully set.
  7. 7. Season with salt and pepper, and sprinkle with crumbled feta cheese before serving.
