
Mediterranean Breakfast Egg Skillet

Ingredients:
- 4 whole Eggs
- 2 tablespoons Olive Oil
- 1 whole, diced Red Bell Pepper
- 1 whole, diced Yellow Onion
- 2 cloves, minced Garlic Cloves
- 1 cup halved Cherry Tomatoes
- 2 cups, packed Spinach Leaves
- 1/2 cup crumbled Feta Cheese
- to taste Salt
- to taste Black Pepper
Instructions:
- 1. Heat olive oil in a large non-stick skillet over medium heat.
- 2. Add diced bell pepper and onion to the skillet and cook until softened.
- 3. Stir in minced garlic and halved cherry tomatoes. Continue to cook until tomatoes are slightly softened.
- 4. Add spinach leaves, and cook until just wilted.
- 5. Make four wells in the vegetable mixture and crack an egg into each well.
- 6. Cover the skillet and cook until the egg whites are set. You can cook longer if you prefer your yolk fully set.
- 7. Season with salt and pepper, and sprinkle with crumbled feta cheese before serving.
