Mediterranean Breakfast Chicken Hash

Ingredients:

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 pieces Garlic cloves
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 2 medium Tomatoes
  • 1 teaspoon Cumin
  • 150 grams Feta cheese
  • 1/2 cup Kalamata olives
  • 1/4 cup Fresh parsley
  • 4 pieces Eggs

Instructions:

  1. Heat a tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken, season with salt and pepper and cook until browned and cooked through, for about 5-7 minutes. Set aside.
  3. In the same skillet, add another tablespoon of oil. Add onion, and cook until softened, about 5 minutes.
  4. Add garlic, bell pepper, zucchini and cook for another 5 minutes or until vegetables are just tender.
  5. Add tomatoes, cumin, cooked chicken and cook for about 2 minutes.
  6. Crumble feta cheese over the top and sprinkle with olives and parsley. Make four wells in the hash and crack an egg into each well.
  7. Cover and cook over medium heat until eggs are to your liking, about 4-5 minutes for runny yolks.
  8. Serve warm with fresh bread.
