
Mediterranean Breakfast Chicken Hash

Ingredients:
- 2 pieces Chicken breast
- 2 tablespoons Olive oil
- 1 large Onion
- 2 pieces Garlic cloves
- 1 large Red bell pepper
- 1 medium Zucchini
- 2 medium Tomatoes
- 1 teaspoon Cumin
- 150 grams Feta cheese
- 1/2 cup Kalamata olives
- 1/4 cup Fresh parsley
- 4 pieces Eggs
Instructions:
- Heat a tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken, season with salt and pepper and cook until browned and cooked through, for about 5-7 minutes. Set aside.
- In the same skillet, add another tablespoon of oil. Add onion, and cook until softened, about 5 minutes.
- Add garlic, bell pepper, zucchini and cook for another 5 minutes or until vegetables are just tender.
- Add tomatoes, cumin, cooked chicken and cook for about 2 minutes.
- Crumble feta cheese over the top and sprinkle with olives and parsley. Make four wells in the hash and crack an egg into each well.
- Cover and cook over medium heat until eggs are to your liking, about 4-5 minutes for runny yolks.
- Serve warm with fresh bread.
