Mediterranean Breakfast Beef Skillet

Ingredients:

  • 1 lbs Ground Beef
  • 2 tbsps Olive Oil
  • 1 Large Red Bell Pepper
  • 1 Large Onion
  • 2 Garlic cloves
  • 2 cups Tomatoes
  • 4 Eggs
  • 1 cup Feta Cheese
  • To Taste Fresh Parsley
  • To Taste Salt and Pepper

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add in the ground beef, breaking it up with a spatula as it cooks.
  3. Once the beef is cooked, remove it from the skillet and set to a side.
  4. In the same skillet, sauté the chopped onion, bell pepper, and minced garlic until they are soft and fragrant.
  5. Add in the tomatoes, and let them cook until they begin to break down and release their juices.
  6. Return the cooked beef to the skillet and mix together well.
  7. Crack the eggs one at a time into the skillet, being careful not to break the yolks.
  8. Cover the skillet and let it cook for about 5-7 minutes, or until the eggs are done to your liking.
  9. Remove from heat and top with crumbled feta cheese and fresh parsley.
  10. Season with salt and pepper as needed. Serve hot and enjoy your quick and easy Mediterranean breakfast beef skillet!
