
Mediterranean Breakfast Beef Skillet

Ingredients:
- 1 lbs Ground Beef
- 2 tbsps Olive Oil
- 1 Large Red Bell Pepper
- 1 Large Onion
- 2 Garlic cloves
- 2 cups Tomatoes
- 4 Eggs
- 1 cup Feta Cheese
- To Taste Fresh Parsley
- To Taste Salt and Pepper
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add in the ground beef, breaking it up with a spatula as it cooks.
- Once the beef is cooked, remove it from the skillet and set to a side.
- In the same skillet, sauté the chopped onion, bell pepper, and minced garlic until they are soft and fragrant.
- Add in the tomatoes, and let them cook until they begin to break down and release their juices.
- Return the cooked beef to the skillet and mix together well.
- Crack the eggs one at a time into the skillet, being careful not to break the yolks.
- Cover the skillet and let it cook for about 5-7 minutes, or until the eggs are done to your liking.
- Remove from heat and top with crumbled feta cheese and fresh parsley.
