Mediterranean Beef Stuffed Peppers

Ingredients:

  • 500 grams Beef
  • 4 whole Bell peppers
  • 1 whole Onion
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 400 grams Crushed tomatoes
  • 100 grams Feta cheese
  • Salt and Pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Cut the tops off of your bell peppers and remove the seeds. Set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is transparent.
  3. Add the beef to the pan and cook completely. Season with cumin, paprika, salt, and pepper.
  4. Add the crushed tomatoes to the pan. Simmer the mixture on low heat for 15 minutes.
  5. While the meat is simmering, place your bell peppers in a baking dish and bake in the oven for about 20 minutes.
  6. After 20 minutes, take the peppers out of the oven. Fill each pepper with the beef mixture.
  7. Crumble the feta cheese over the top of each stuffed pepper. Return the peppers to the oven for another 15 minutes, or until cheese is melted and slightly brown.
  8. Allow peppers to cool for a few minutes before serving. Enjoy your Mediterranean Beef Stuffed Peppers!
