
Mediterranean Beef Stuffed Bell Peppers

Ingredients:
- 2 whole Red bell peppers
- 0.5 lb Extra lean ground beef
- 0.5 chopped Red onion
- 2 minced Garlic cloves
- 0.5 chopped Zucchini
- 1 tablespoon Olive oil
- 2 chopped Tomatoes
- 50 grams Low fat feta cheese
- 1 handful Fresh parsley
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place the peppers in a baking dish and bake for 15 minutes, until softened but still holding their shape.
- While the peppers are baking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
- Add the ground beef to the skillet and brown. Break up the meat as it cooks with a wooden spoon or spatula.
- Once the beef is browned, add the zucchini and tomatoes to the skillet. Season with salt and pepper.
- Cook for an additional 5 minutes, until the vegetables are tender and the flavors have melded together.
- Remove the skillet from heat and stir in the chopped feta and parsley.
- Stuff the beef mixture into the bell peppers and place back into the oven for an additional 5 minutes, to heat through and meld the flavors.
- Serve immediately, garnished with extra parsley and feta if desired.
