Mediterranean Beef Stuffed Bell Peppers

Ingredients:

  • 2 whole Red bell peppers
  • 0.5 lb Extra lean ground beef
  • 0.5 chopped Red onion
  • 2 minced Garlic cloves
  • 0.5 chopped Zucchini
  • 1 tablespoon Olive oil
  • 2 chopped Tomatoes
  • 50 grams Low fat feta cheese
  • 1 handful Fresh parsley
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place the peppers in a baking dish and bake for 15 minutes, until softened but still holding their shape.
  2. While the peppers are baking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
  3. Add the ground beef to the skillet and brown. Break up the meat as it cooks with a wooden spoon or spatula.
  4. Once the beef is browned, add the zucchini and tomatoes to the skillet. Season with salt and pepper.
  5. Cook for an additional 5 minutes, until the vegetables are tender and the flavors have melded together.
  6. Remove the skillet from heat and stir in the chopped feta and parsley.
  7. Stuff the beef mixture into the bell peppers and place back into the oven for an additional 5 minutes, to heat through and meld the flavors.
  8. Serve immediately, garnished with extra parsley and feta if desired.
