
Mediterranean Beef Stir-Fry with Fresh Vegetables

Ingredients:
- 500 g Beef sirloin
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Zucchini
- 200 g Cherry tomatoes
- 100 g Feta cheese
- 1 bunch Fresh parsley
- 1 lemon Lemon juice
- to taste Salt
- to taste Pepper
Instructions:
- Start by preparing all the ingredients: cut the beef into thin strips, mince the garlic, dice the bell peppers and zucchini, halve the cherry tomatoes and roughly chop the parsley.
- Heat the olive oil in a pan over medium heat, then add in the minced garlic. Sauté it until it’s fragrant.
- Add the beef strips into the pan. Stir-fry until they're browned and cooked to your preference.
- Add the diced bell peppers, zucchini, and cherry tomatoes to the pan. Stir-fry until they start to soften.
- Sprinkle feta cheese and parsley over the mix. Drizzle with lemon juice and season with salt and pepper to taste.
- Continue to stir-fry for another 2-3 minutes, then remove from heat.
- Serve the stir-fry warm with whole grain bread or pita on the side, if desired.
