Mediterranean Beef Stir-Fry with Fresh Vegetables

Ingredients:

  • 500 g Beef sirloin
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 1 Zucchini
  • 200 g Cherry tomatoes
  • 100 g Feta cheese
  • 1 bunch Fresh parsley
  • 1 lemon Lemon juice
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Start by preparing all the ingredients: cut the beef into thin strips, mince the garlic, dice the bell peppers and zucchini, halve the cherry tomatoes and roughly chop the parsley.
  2. Heat the olive oil in a pan over medium heat, then add in the minced garlic. Sauté it until it’s fragrant.
  3. Add the beef strips into the pan. Stir-fry until they're browned and cooked to your preference.
  4. Add the diced bell peppers, zucchini, and cherry tomatoes to the pan. Stir-fry until they start to soften.
  5. Sprinkle feta cheese and parsley over the mix. Drizzle with lemon juice and season with salt and pepper to taste.
  6. Continue to stir-fry for another 2-3 minutes, then remove from heat.
  7. Serve the stir-fry warm with whole grain bread or pita on the side, if desired.
