Mediterranean Beef Stew

Ingredients:

  • 2 lbs beef stew meat
  • 2 tbsp extra virgin olive oil
  • 1 large onion
  • 3 cloves garlic
  • 2 red bell pepper
  • 4 large tomatoes
  • 1 cup kalamata olives
  • 2 cups beef broth
  • 2 tsp paprika
  • 1 tsp cinnamon
  • 2 bay leaves
  • to taste salt and pepper

Instructions:

  1. 1. Heat the olive oil in a large dutch oven or pot over medium heat.
  2. 2. Add the beef to the pot and brown on all sides. Remove the beef and set aside.
  3. 3. Add the onions, garlic, and bell peppers to the pot and sauté until onions are translucent.
  4. 4. Add the tomatoes, kalamata olives, beef broth, paprika, cinnamon and bay leaves to the pot. Stir to combine.
  5. 5. Return the beef to the pot. Bring the pot to a boil, then reduce the heat and let it simmer for about 3 hours.
  6. 6. After 3 hours, taste the stew and adjust seasonings as necessary. Remove the bay leaves before serving.
  7. 7. Serve the stew with warm crusty bread and enjoy your Mediterranean Beef Stew.
