Mediterranean Beef Stew

Ingredients:
- 2 lbs beef stew meat
- 2 tbsp extra virgin olive oil
- 1 large onion
- 3 cloves garlic
- 2 red bell pepper
- 4 large tomatoes
- 1 cup kalamata olives
- 2 cups beef broth
- 2 tsp paprika
- 1 tsp cinnamon
- 2 bay leaves
- to taste salt and pepper
Instructions:
- 1. Heat the olive oil in a large dutch oven or pot over medium heat.
- 2. Add the beef to the pot and brown on all sides. Remove the beef and set aside.
- 3. Add the onions, garlic, and bell peppers to the pot and sauté until onions are translucent.
- 4. Add the tomatoes, kalamata olives, beef broth, paprika, cinnamon and bay leaves to the pot. Stir to combine.
- 5. Return the beef to the pot. Bring the pot to a boil, then reduce the heat and let it simmer for about 3 hours.
- 6. After 3 hours, taste the stew and adjust seasonings as necessary. Remove the bay leaves before serving.
- 7. Serve the stew with warm crusty bread and enjoy your Mediterranean Beef Stew.
