Mediterranean Beef Skewers

Ingredients:

  • 1 pound Beef sirloin
  • 8 pieces Long skewers
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 medium Red onion
  • 16 pieces Cherry tomatoes
  • 1/4 cup Olive oil
  • 2 large Garlic cloves
  • 2 whole Lemon
  • 1 bunch Fresh oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions:

  1. First, cut the beef sirloin into 1-inch pieces and place them into a large bowl.
  2. Slice the red bell pepper, yellow bell pepper, and red onion into roughly 1-inch pieces as well, placing them in the bowl with the beef.
  3. In a separate bowl, prepare the marinade by mixing together the olive oil, minced garlic cloves, juice from the lemons, finely chopped fresh oregano, salt, and black pepper.
  4. Pour the marinade over the beef and vegetables, making sure everything is evenly coated. Cover the bowl and place it in the fridge to marinate for at least 2 hours, or overnight for best results.
  5. After the marinade process, thread the marinated beef pieces, bell peppers, onions, and cherry tomatoes onto the skewers, alternating between each ingredient.
  6. Preheat your grill or stovetop grill pan over medium-high heat. Once hot enough, place the skewers onto the grill. Cook for approximately 3 minutes each side for medium-rare beef, or until you reach your desired level of doneness.
  7. Once the skewers are cooked, remove from the grill and allow to rest for a few minutes before serving. Enjoy your Healthy Mediterranean Beef Skewers as a satisfying and nourishing snack!
