
Mediterranean Beef Skewers

Ingredients:
- 1 pound Beef sirloin
- 8 pieces Long skewers
- 1 large Red bell pepper
- 1 large Yellow bell pepper
- 1 medium Red onion
- 16 pieces Cherry tomatoes
- 1/4 cup Olive oil
- 2 large Garlic cloves
- 2 whole Lemon
- 1 bunch Fresh oregano
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Instructions:
- First, cut the beef sirloin into 1-inch pieces and place them into a large bowl.
- Slice the red bell pepper, yellow bell pepper, and red onion into roughly 1-inch pieces as well, placing them in the bowl with the beef.
- In a separate bowl, prepare the marinade by mixing together the olive oil, minced garlic cloves, juice from the lemons, finely chopped fresh oregano, salt, and black pepper.
- Pour the marinade over the beef and vegetables, making sure everything is evenly coated. Cover the bowl and place it in the fridge to marinate for at least 2 hours, or overnight for best results.
- After the marinade process, thread the marinated beef pieces, bell peppers, onions, and cherry tomatoes onto the skewers, alternating between each ingredient.
- Preheat your grill or stovetop grill pan over medium-high heat. Once hot enough, place the skewers onto the grill. Cook for approximately 3 minutes each side for medium-rare beef, or until you reach your desired level of doneness.
- Once the skewers are cooked, remove from the grill and allow to rest for a few minutes before serving. Enjoy your Healthy Mediterranean Beef Skewers as a satisfying and nourishing snack!
