Mediterranean Beef Shakshuka

Ingredients:

  • 2 tbsp Olive oil
  • 1 large Red onion
  • 3 cloves Garlic
  • 500 grams Ground beef
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 14 oz can Crushed Tomatoes
  • 4 large Eggs
  • to taste Salt and pepper
  • few sprigs Parsley
  • 50 grams Feta cheese

Instructions:

  1. First, heat the olive oil in a large pan over medium heat. Then add the onion and garlic and cook until soft and fragrant.
  2. Add the ground beef to the pan and break it up with a wooden spoon. Cook until browned.
  3. Then add the cumin and paprika and stir until well combined.
  4. Add the crushed tomatoes to the pan and bring to a simmer. Let it cook for about 10-15 minutes until the mixture is thickened.
  5. Make four indentations in the beef and tomato mixture and crack an egg into each indentation. Cover the pan and let it cook for about 7-10 minutes until the eggs are cooked to your liking.
  6. Season with salt and pepper. Garnish with chopped parsley and crumbled feta cheese just before serving.
