
Mediterranean Beef Shakshuka

Ingredients:
- 2 tbsp Olive oil
- 1 large Red onion
- 3 cloves Garlic
- 500 grams Ground beef
- 1 tsp Cumin
- 1 tsp Paprika
- 1 14 oz can Crushed Tomatoes
- 4 large Eggs
- to taste Salt and pepper
- few sprigs Parsley
- 50 grams Feta cheese
Instructions:
- First, heat the olive oil in a large pan over medium heat. Then add the onion and garlic and cook until soft and fragrant.
- Add the ground beef to the pan and break it up with a wooden spoon. Cook until browned.
- Then add the cumin and paprika and stir until well combined.
- Add the crushed tomatoes to the pan and bring to a simmer. Let it cook for about 10-15 minutes until the mixture is thickened.
- Make four indentations in the beef and tomato mixture and crack an egg into each indentation. Cover the pan and let it cook for about 7-10 minutes until the eggs are cooked to your liking.
- Season with salt and pepper. Garnish with chopped parsley and crumbled feta cheese just before serving.
