
Mediterranean Beef Pita Pockets

Ingredients:
- 1 pound Beef skirt steak
- 2 Garlic cloves, minced
- 2 tablespoons Olive oil
- 2 tablespoons Red wine vinegar
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
- 4 pieces Pita bread
- 1 head Lettuce
- 2 Tomatoes, diced
- 1 Red onion, thinly sliced
- 1 cup Tzatziki sauce
Instructions:
- In a mixing bowl, combine minced garlic, olive oil, red wine vinegar, paprika, cumin, salt and pepper to make the marinade.
- Add the beef steak to the marinade, ensuring it's fully coated. Let it sit for at least 10 minutes.
- Heat a grill or skillet over medium heat. Remove the steak from the marinade and cook for about 3-4 minutes on each side, or until it reaches desired doneness.
- Let the steak rest for a few minutes, then slice it into thin strips.
- Toast the pita bread lightly on the grill or skillet.
- To assemble the pita pockets, open each pita bread and add lettuce, tomato, onion, and slices of beef.
- Drizzle each pita pocket with tzatziki sauce.
- Serve the Mediterranean Beef Pita Pockets immediately, or wrap them in foil for a portable snack.
