Mediterranean Beef Pita Pockets

Ingredients:

  • 1 pound Beef skirt steak
  • 2 Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Pita bread
  • 1 head Lettuce
  • 2 Tomatoes, diced
  • 1 Red onion, thinly sliced
  • 1 cup Tzatziki sauce

Instructions:

  1. In a mixing bowl, combine minced garlic, olive oil, red wine vinegar, paprika, cumin, salt and pepper to make the marinade.
  2. Add the beef steak to the marinade, ensuring it's fully coated. Let it sit for at least 10 minutes.
  3. Heat a grill or skillet over medium heat. Remove the steak from the marinade and cook for about 3-4 minutes on each side, or until it reaches desired doneness.
  4. Let the steak rest for a few minutes, then slice it into thin strips.
  5. Toast the pita bread lightly on the grill or skillet.
  6. To assemble the pita pockets, open each pita bread and add lettuce, tomato, onion, and slices of beef.
  7. Drizzle each pita pocket with tzatziki sauce.
  8. Serve the Mediterranean Beef Pita Pockets immediately, or wrap them in foil for a portable snack.
