Mediterranean Baked Vegetables

Ingredients:

  • 1 whole eggplant
  • 2 whole zucchini
  • 1 whole red bell pepper
  • 1 whole yellow bell pepper
  • 2 whole tomatoes
  • 4 whole garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Instructions:

  1. Preheat oven to 180C/350F.
  2. Chop the eggplant, zucchini, bell peppers, and tomatoes into bite-sized pieces.
  3. Peel and slice the garlic cloves.
  4. Place the chopped vegetables and garlic slices into a deep baking dish.
  5. Drizzle the olive oil over the top of the vegetables.
  6. Sprinkle the dried oregano over the top, and season with salt and pepper.
  7. Mix the vegetables, oil, and seasonings together until the vegetables are evenly coated.
  8. Bake in the preheated oven for 45 minutes, until the vegetables are tender and beginning to brown.
  9. Remove from oven and let cool slightly before serving as a delicious and healthy snack.
