
Mediterranean Baked Vegetables

Ingredients:
- 1 whole eggplant
- 2 whole zucchini
- 1 whole red bell pepper
- 1 whole yellow bell pepper
- 2 whole tomatoes
- 4 whole garlic cloves
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- to taste salt
- to taste pepper
Instructions:
- Preheat oven to 180C/350F.
- Chop the eggplant, zucchini, bell peppers, and tomatoes into bite-sized pieces.
- Peel and slice the garlic cloves.
- Place the chopped vegetables and garlic slices into a deep baking dish.
- Drizzle the olive oil over the top of the vegetables.
- Sprinkle the dried oregano over the top, and season with salt and pepper.
- Mix the vegetables, oil, and seasonings together until the vegetables are evenly coated.
- Bake in the preheated oven for 45 minutes, until the vegetables are tender and beginning to brown.
- Remove from oven and let cool slightly before serving as a delicious and healthy snack.
