Mediterranean Baked Fish with Tomatoes and Olives

Ingredients:
- 4 pieces White fish fillets
- 2 tbsp Olive oil
- to taste Salt
- to taste Black Pepper
- 1 medium Onion, finely chopped
- 2 Garlic cloves, minced
- 1 can Diced tomatoes
- 1 cup Pitted olives, chopped
- 1 tbsp Capers, rinsed
- 1 Lemon, juice and zest
- 1 bunch Fresh parsley, chopped
Instructions:
- Preheat the oven to 375°F (190°C). Rub the fish fillets with a tablespoon of olive oil, salt, and pepper, and set them aside.
- In a large oven-safe pan, heat the remaining olive oil. Add the onion and garlic and sauté until soft.
- Add the tomatoes, olives, capers, and the juice and zest of the lemon to the pan and stir everything together. Bring the mixture to a simmer.
- Place the fish fillets on top of the tomato mixture in the pan. Place the pan in the oven and bake for 20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Sprinkle the chopped parsley over the top of the fish and serve with warm crusty bread.
