
Mediterranean Baked Fish with Feta and Tomatoes

Ingredients:
- 4 servings fish fillets
- 3 tablespoons extra-virgin olive oil
- 2 medium-sized onions
- 2 pieces garlic clove
- 1 large red bell pepper
- 3 medium ripe tomatoes
- 1/2 cup kalamata olives
- 1 tablespoon Dried oregano
- 1/2 cup crumbled feta cheese
- to taste salt and pepper
Instructions:
- Preheat your oven to 400 degrees F (204 degrees C).
- Heat oil in a large oven-safe skillet over medium heat. Add chopped onions and minced garlic, cook until softened.
- Add chopped red bell pepper, tomatoes, olives, and oregano. Season with salt and pepper. Cook for another 5 minutes, until the tomatoes have slightly collapsed.
- Nestle the fish fillets into the skillet. Top the fillets with the crumbled feta.
- Transfer the skillet to the pre-heated oven. Bake until the fish is cooked through, about 15-20 minutes, depending on the thickness of the fillets.
- Serve the fish hot, spoon the skillet juices over the top before serving.
