Mediterranean Baked Fish with Feta and Tomatoes

Ingredients:

  • 4 servings fish fillets
  • 3 tablespoons extra-virgin olive oil
  • 2 medium-sized onions
  • 2 pieces garlic clove
  • 1 large red bell pepper
  • 3 medium ripe tomatoes
  • 1/2 cup kalamata olives
  • 1 tablespoon Dried oregano
  • 1/2 cup crumbled feta cheese
  • to taste salt and pepper

Instructions:

  1. Preheat your oven to 400 degrees F (204 degrees C).
  2. Heat oil in a large oven-safe skillet over medium heat. Add chopped onions and minced garlic, cook until softened.
  3. Add chopped red bell pepper, tomatoes, olives, and oregano. Season with salt and pepper. Cook for another 5 minutes, until the tomatoes have slightly collapsed.
  4. Nestle the fish fillets into the skillet. Top the fillets with the crumbled feta.
  5. Transfer the skillet to the pre-heated oven. Bake until the fish is cooked through, about 15-20 minutes, depending on the thickness of the fillets.
  6. Serve the fish hot, spoon the skillet juices over the top before serving.
