
Mediterranean Baked Fish Snack

Ingredients:
- 4 pieces White fish fillets (like cod or halibut)
- 2 tablespoons Olive oil
- 2 medium sized Tomatoes
- 1 medium sized Red onion
- 1 medium sized Lemon
- 4 cloves Garlic
- 1 handful Fresh basil
- to taste Salt and pepper
- 200 grams Feta cheese
- 1 handful Kalamata olives
Instructions:
- Preheat the oven to 375 degrees and grease a large baking dish with half of the olive oil.
- Arrange the fish fillets in the baking dish and drizzle with the remaining olive oil.
- Slice the tomatoes, red onion, and lemon, and arrange around the fish in the baking dish.
- Crush the garlic and sprinkle it over the fish and vegetables.
- Sprinkle the fish with salt, pepper, and torn basil leaves.
- Top the fish with crumbled feta cheese and olives.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the fish is cooked through and the feta cheese is browned.
- Allow the dish to cool for a few minutes before serving.
