Mediterranean Baked Fish Snack

Ingredients:

  • 4 pieces White fish fillets (like cod or halibut)
  • 2 tablespoons Olive oil
  • 2 medium sized Tomatoes
  • 1 medium sized Red onion
  • 1 medium sized Lemon
  • 4 cloves Garlic
  • 1 handful Fresh basil
  • to taste Salt and pepper
  • 200 grams Feta cheese
  • 1 handful Kalamata olives

Instructions:

  1. Preheat the oven to 375 degrees and grease a large baking dish with half of the olive oil.
  2. Arrange the fish fillets in the baking dish and drizzle with the remaining olive oil.
  3. Slice the tomatoes, red onion, and lemon, and arrange around the fish in the baking dish.
  4. Crush the garlic and sprinkle it over the fish and vegetables.
  5. Sprinkle the fish with salt, pepper, and torn basil leaves.
  6. Top the fish with crumbled feta cheese and olives.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 5 minutes, or until the fish is cooked through and the feta cheese is browned.
  9. Allow the dish to cool for a few minutes before serving.
