
Mediterranean Baked Fish Dinner

Ingredients:
- 4 pieces white fish fillets
- 2 tbsp olive oil
- 1 lemon
- 3 garlic cloves, minced
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives, pitted and chopped
- 2 tbsp fresh parsley, chopped
- to taste salt
- to taste black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Place the fish fillets in a baking dish. Drizzle with olive oil.
- Squeeze the lemon over the fish, then sprinkle the minced garlic over the top.
- Scatter the cherry tomatoes and olives around the fish in the baking dish.
- Season everything with salt and pepper to your taste.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Sprinkle with fresh parsley before serving.
