Mediterranean Baked Fish Dinner

Ingredients:

  • 4 pieces white fish fillets
  • 2 tbsp olive oil
  • 1 lemon
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives, pitted and chopped
  • 2 tbsp fresh parsley, chopped
  • to taste salt
  • to taste black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the fish fillets in a baking dish. Drizzle with olive oil.
  3. Squeeze the lemon over the fish, then sprinkle the minced garlic over the top.
  4. Scatter the cherry tomatoes and olives around the fish in the baking dish.
  5. Season everything with salt and pepper to your taste.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Sprinkle with fresh parsley before serving.
