
Mediterranean Baked Fish Breakfast Casserole

Ingredients:
- 4 pieces White fish fillets
- 2 medium sized Fresh tomatoes
- 1/4 cup Kalamata olives
- 1/2 cup Feta cheese
- 2 tablespoons Extra virgin olive oil
- 1 medium sized White onion
- 2 pieces Garlic cloves
- 6 pieces Eggs
- 2 tablespoons Fresh dill
- To taste Salt and Pepper
Instructions:
- Preheat the oven to 375 degrees Fahrenheit. Oil a casserole dish with half of the olive oil.
- Chop the onion, tomatoes, garlic. Remove the pits from the olives and chop them as well. Combine them in a bowl with the crumbled feta cheese.
- Place the fish fillets in the casserole dish and distribute the tomato and olive mixture evenly over the top of the fish. Drizzle the remaining olive oil over the top.
- Bake for 20-25 minutes, or until the fish is cooked through and opaque.
- While the fish is baking, whisk together the eggs and chopped dill. Season with salt and pepper.
- Pour the egg mixture over the fish and vegetables, making sure it spreads evenly. Return the casserole to the oven and bake for an additional 15 minutes, or until the eggs are set.
- Remove from the oven and let rest for a few minutes before serving. Enjoy this comforting Mediterranean breakfast casserole hot.
