
Masala Egg Curry

Ingredients:
- 6 units Eggs
- 2 medium Onion
- 2 medium Tomatoes
- 3 units Garlic Cloves
- 1 inch piece Ginger
- 1/2 tsp Turmeric Powder
- 1/2 tsp Red Chili Powder
- 1 tsp Garam Masala
- 2 tbsp Mustard Oil
- to taste units Salt
- A handful units Fresh Coriander Leaves
Instructions:
- Firstly, boil the eggs, peel them and keep them aside.
- Next, heat oil in a pan and add finely chopped onions to it. Cook until onions turn golden brown.
- In a separate bowl, make a smooth paste of the garlic, ginger and tomatoes. Add this paste to the pan and cook for a few minutes.
- Add spices to the pan including turmeric, red chili powder, garam masala and salt. Cook until oil separates from the mixture.
- Now, gently add the boiled eggs into the pan and mix well. Add a cup of water and let the eggs simmer in the masala for around 10 minutes.
- Garnish the dish with freshly chopped coriander leaves and serve hot with rice or roti.
