Masala Egg Curry

Ingredients:

  • 6 units Eggs
  • 2 medium Onion
  • 2 medium Tomatoes
  • 3 units Garlic Cloves
  • 1 inch piece Ginger
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • 1 tsp Garam Masala
  • 2 tbsp Mustard Oil
  • to taste units Salt
  • A handful units Fresh Coriander Leaves

Instructions:

  1. Firstly, boil the eggs, peel them and keep them aside.
  2. Next, heat oil in a pan and add finely chopped onions to it. Cook until onions turn golden brown.
  3. In a separate bowl, make a smooth paste of the garlic, ginger and tomatoes. Add this paste to the pan and cook for a few minutes.
  4. Add spices to the pan including turmeric, red chili powder, garam masala and salt. Cook until oil separates from the mixture.
  5. Now, gently add the boiled eggs into the pan and mix well. Add a cup of water and let the eggs simmer in the masala for around 10 minutes.
  6. Garnish the dish with freshly chopped coriander leaves and serve hot with rice or roti.
