
Masala Egg Bhurji

Ingredients:
- 4 whole Eggs
- 1 medium Onion
- 1 small Green bell pepper
- 2 medium Tomatoes
- 1 whole Green chilli
- 2 cloves Garlic
- 1 inch Ginger
- 1/2 teaspoon Turmeric powder
- 3/4 teaspoon Red chilli powder
- 1/2 teaspoon Garam masala powder
- 1/2 teaspoon Cumin seeds
- to taste Salt
- handful chopped Coriander leaves
- 2 tablespoons Oil
Instructions:
- 1. Finely chop onion, bell pepper, tomatoes, green chilli, garlic and ginger.
- 2. In a non-stick pan, heat oil and add cumin seeds.
- 3. Once the cumin seeds crackle, add chopped onions and sauté until they turn translucent.
- 4. Add the chopped garlic and ginger, sauté for another 2 minutes.
- 5. Now, add the chopped green chilli and bell pepper, cook for 2-3 minutes.
- 6. Add the chopped tomatoes and sprinkle salt, turmeric powder, red chilli powder, and garam masala.
- 7. Mix well and cook until tomatoes are soft.
- 8. Meanwhile, crack open the eggs in a bowl, whisk, and keep them ready.
- 9. Once the tomatoes are well cooked, pour the whisked eggs into the pan.
- 10. Mix continuously on a low flame until the eggs are scrambled and cooked.
- 11. Garnish with chopped coriander leaves, mix well, and turn off the flame.
- 12. Serve the delicious Egg bhurji with hot toasted bread or rotis.
