Masala Egg Bhurji

Ingredients:

  • 4 whole Eggs
  • 1 medium Onion
  • 1 small Green bell pepper
  • 2 medium Tomatoes
  • 1 whole Green chilli
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1/2 teaspoon Turmeric powder
  • 3/4 teaspoon Red chilli powder
  • 1/2 teaspoon Garam masala powder
  • 1/2 teaspoon Cumin seeds
  • to taste Salt
  • handful chopped Coriander leaves
  • 2 tablespoons Oil

Instructions:

  1. 1. Finely chop onion, bell pepper, tomatoes, green chilli, garlic and ginger.
  2. 2. In a non-stick pan, heat oil and add cumin seeds.
  3. 3. Once the cumin seeds crackle, add chopped onions and sauté until they turn translucent.
  4. 4. Add the chopped garlic and ginger, sauté for another 2 minutes.
  5. 5. Now, add the chopped green chilli and bell pepper, cook for 2-3 minutes.
  6. 6. Add the chopped tomatoes and sprinkle salt, turmeric powder, red chilli powder, and garam masala.
  7. 7. Mix well and cook until tomatoes are soft.
  8. 8. Meanwhile, crack open the eggs in a bowl, whisk, and keep them ready.
  9. 9. Once the tomatoes are well cooked, pour the whisked eggs into the pan.
  10. 10. Mix continuously on a low flame until the eggs are scrambled and cooked.
  11. 11. Garnish with chopped coriander leaves, mix well, and turn off the flame.
  12. 12. Serve the delicious Egg bhurji with hot toasted bread or rotis.
