Masala Dosa

Ingredients:

  • 1 cup Parboiled rice
  • 1/2 cup Urad Dal
  • 1 teaspoon Fenugreek seeds
  • 2 large Potatoes
  • 1 medium Onion
  • 2 pieces Green chilies
  • as needed Oil
  • 1 teaspoon Mustard seeds
  • 1/2 teaspoon Turmeric
  • to taste Salt

Instructions:

  1. Soak the rice, urad dal, and fenugreek seeds in water for 4-5 hours. Then grind it into a smooth paste adding water as needed.
  2. Allow the batter to ferment overnight or for 8-10 hours.
  3. Meanwhile, prepare the potato masala. Boil the potatoes, peel them and set aside.
  4. Heat oil in a pan, add mustard seeds and once they splutter add chopped onion and green chilies. Sauté till onions turn translucent.
  5. Add turmeric powder and boiled potatoes. Mix well and keep aside.
  6. Heat a non-stick pan, pour a ladleful of dosa batter in the center and quickly spread it into a thin round circle.
  7. Pour some oil around the dosa and cook until the bottom starts turning golden brown.
  8. Place some potato masala in the center, roll the dosa and serve hot with sambar and chutney.
