
Masala Chai & Vegetable Pakoras

Ingredients:
- 2 cups water
- 2 tbsp loose leaf black tea
- 1 cup whole milk
- 2 tbsp sugar
- 2 cardamom pods
- 1 cup chickpea flour (Besan)
- 2 cups mixed vegetables (like onion, potato, spinach, bell pepper), finely chopped
- 1 tsp turmeric
- 1 tsp garam masala
- to taste salt
- 1 cup water (for batter)
- for deep frying vegetable oil
Instructions:
- Start by making the chai. Bring 2 cups of water to a boil in a pot. Once boiling, add the loose leaf tea and cardamom pods. Allow it to boil for about 2-3 minutes.
- Reduce the heat and add the milk and sugar to the pot. Let it simmer for about 5 minutes on low heat. Keep stirring occasionally to prevent the milk from burning.
- Once done, strain the chai into cups and keep it aside.
- For the vegetable pakoras, take chickpea flour in a bowl. Add turmeric, garam masala and salt to the flour. Mix well.
- Add finely chopped mixed vegetables into the bowl. Gradually add water and mix until a thick batter is formed.
- Heat vegetable oil in a deep pan for frying. Once heated, drop tablespoon-sized portions of the batter into the hot oil. Be careful not to overcrowd the pan.
- Fry the pakoras till they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
- Serve the hot pakoras with masala chai on the side. Enjoy this delicious Indian comfort food snack.
