Masala Chai & Vegetable Pakoras

Ingredients:

  • 2 cups water
  • 2 tbsp loose leaf black tea
  • 1 cup whole milk
  • 2 tbsp sugar
  • 2 cardamom pods
  • 1 cup chickpea flour (Besan)
  • 2 cups mixed vegetables (like onion, potato, spinach, bell pepper), finely chopped
  • 1 tsp turmeric
  • 1 tsp garam masala
  • to taste salt
  • 1 cup water (for batter)
  • for deep frying vegetable oil

Instructions:

  1. Start by making the chai. Bring 2 cups of water to a boil in a pot. Once boiling, add the loose leaf tea and cardamom pods. Allow it to boil for about 2-3 minutes.
  2. Reduce the heat and add the milk and sugar to the pot. Let it simmer for about 5 minutes on low heat. Keep stirring occasionally to prevent the milk from burning.
  3. Once done, strain the chai into cups and keep it aside.
  4. For the vegetable pakoras, take chickpea flour in a bowl. Add turmeric, garam masala and salt to the flour. Mix well.
  5. Add finely chopped mixed vegetables into the bowl. Gradually add water and mix until a thick batter is formed.
  6. Heat vegetable oil in a deep pan for frying. Once heated, drop tablespoon-sized portions of the batter into the hot oil. Be careful not to overcrowd the pan.
  7. Fry the pakoras till they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
  8. Serve the hot pakoras with masala chai on the side. Enjoy this delicious Indian comfort food snack.
