Marinated Grilled Fish Skewers

Ingredients:
- 2 large Fish fillets
- 3 tablespoons Olive oil
- 1 whole Lemon
- 2 chopped Garlic cloves
- 2 tablespoons Fresh parsley
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 8 Wooden skewers
Instructions:
- Cut the fish fillets into 1-inch pieces and set aside.
- In a large bowl, combine the olive oil, juice of the lemon, chopped garlic, fresh parsley, salt, and black pepper and mix well.
- Add the fish pieces to the marinade and toss gently to coat. Cover the bowl and refrigerate for at least 2 hours.
- Soak the wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
- Preheat the grill to medium-high heat.
- Thread the marinated fish pieces onto the soaked skewers.
- Grill the fish skewers for about 2-3 minutes on each side, or until the fish is cooked through and slightly charred.
- Serve the grilled fish skewers warm with a side of your favorite Mediterranean salad and enjoy!
