
Mapo Tofu

Ingredients:
- 1 block soft tofu
- 100 grams ground pork
- 2 tablespoons doubanjiang (spicy bean paste)
- 2 cloves garlic
- 1 leek
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 teaspoon szechuan peppercorns
- 2 tablespoons cooking oil
Instructions:
- Cut the tofu into 1 inch cubes and set aside.
- In a wok, heat the oil and fry the ground pork until it's no longer pink.
- Add the garlic, leek, doubanjiang, and Szechuan peppercorns. Stir-fry for 2-3 minutes until the spices are fragrant.
- Add the tofu to the wok, being careful not to break it. Stir gently to coat the tofu in the sauce.
- In a separate bowl, mix the cornstarch with a little water to make a slurry. Pour this into the wok and stir gently to thicken the sauce.
- Simmer for a few more minutes until the tofu has soaked up the flavors of the sauce.
- Serve over steamed rice and enjoy your Mapo Tofu!
