Mapo Tofu

Ingredients:

  • 1 block soft tofu
  • 100 grams ground pork
  • 2 tablespoons doubanjiang (spicy bean paste)
  • 2 cloves garlic
  • 1 leek
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon szechuan peppercorns
  • 2 tablespoons cooking oil

Instructions:

  1. Cut the tofu into 1 inch cubes and set aside.
  2. In a wok, heat the oil and fry the ground pork until it's no longer pink.
  3. Add the garlic, leek, doubanjiang, and Szechuan peppercorns. Stir-fry for 2-3 minutes until the spices are fragrant.
  4. Add the tofu to the wok, being careful not to break it. Stir gently to coat the tofu in the sauce.
  5. In a separate bowl, mix the cornstarch with a little water to make a slurry. Pour this into the wok and stir gently to thicken the sauce.
  6. Simmer for a few more minutes until the tofu has soaked up the flavors of the sauce.
  7. Serve over steamed rice and enjoy your Mapo Tofu!
