Lunchtime Italian Poached Fish

Ingredients:

  • 4 pieces Fish fillets
  • 2 tablespoons Olive oil
  • 1 piece Yellow onion
  • 2 pieces Garlic cloves
  • 3 cups Dry white wine
  • 1 tablespoon Italian herbs mix
  • Zest of 1 lemon Lemon zest
  • 1 bunch Fresh parsley
  • to taste Salt and pepper

Instructions:

  1. Prepare the fish fillets by patting them dry with a paper towel. Season them with salt and pepper on both sides.
  2. In a large frying pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are translucent.
  3. Add the wine to the pan and bring it to a simmer. Stir in the Italian herbs and lemon zest.
  4. Place the fish fillets into the pan. Allow them to poach in the wine mixture for about 10 minutes, or until they are cooked through and flaky.
  5. Serve the poached fish hot, garnished with fresh parsley.
