
Lunchtime Italian Poached Fish

Ingredients:
- 4 pieces Fish fillets
- 2 tablespoons Olive oil
- 1 piece Yellow onion
- 2 pieces Garlic cloves
- 3 cups Dry white wine
- 1 tablespoon Italian herbs mix
- Zest of 1 lemon Lemon zest
- 1 bunch Fresh parsley
- to taste Salt and pepper
Instructions:
- Prepare the fish fillets by patting them dry with a paper towel. Season them with salt and pepper on both sides.
- In a large frying pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are translucent.
- Add the wine to the pan and bring it to a simmer. Stir in the Italian herbs and lemon zest.
- Place the fish fillets into the pan. Allow them to poach in the wine mixture for about 10 minutes, or until they are cooked through and flaky.
- Serve the poached fish hot, garnished with fresh parsley.
