
Linguine Ai Frutti Di Mare (Seafood Linguine)

Ingredients:
- 500 grams Linguine pasta
- 3 tablespoons Olive oil
- 2 cloves Garlic cloves
- 500 grams Mixed seafood (clams, mussels, prawns, squid)
- 1 can Chopped tomatoes
- 1 cup Dry white wine
- to taste Salt
- to taste Pepper
- a handful chopped Fresh parsley
Instructions:
- 1. Bring a large pot of salted water to the boil. Add the linguine pasta and cook until al dente.
- 2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the chopped garlic and cook until golden brown.
- 3. Add the mixed seafood to the pan and sauté for 5 minutes until the seafood is partially cooked.
- 4. Add the can of chopped tomatoes and white wine to the pan. Season with salt and pepper. Reduce heat to low, cover the pan, and simmer for 10 minutes.
- 5. Drain the cooked linguine, reserving some pasta water. Add the linguine to the pan with the seafood. Toss to combine, adding some pasta water if necessary to loosen the sauce.
- 6. Garnish with fresh parsley before serving.
