Linguine Ai Frutti Di Mare (Seafood Linguine)

Ingredients:

  • 500 grams Linguine pasta
  • 3 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 500 grams Mixed seafood (clams, mussels, prawns, squid)
  • 1 can Chopped tomatoes
  • 1 cup Dry white wine
  • to taste Salt
  • to taste Pepper
  • a handful chopped Fresh parsley

Instructions:

  1. 1. Bring a large pot of salted water to the boil. Add the linguine pasta and cook until al dente.
  2. 2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the chopped garlic and cook until golden brown.
  3. 3. Add the mixed seafood to the pan and sauté for 5 minutes until the seafood is partially cooked.
  4. 4. Add the can of chopped tomatoes and white wine to the pan. Season with salt and pepper. Reduce heat to low, cover the pan, and simmer for 10 minutes.
  5. 5. Drain the cooked linguine, reserving some pasta water. Add the linguine to the pan with the seafood. Toss to combine, adding some pasta water if necessary to loosen the sauce.
  6. 6. Garnish with fresh parsley before serving.
