Lemon Rice Breakfast Bowl

Ingredients:

  • 1 cup Brown Rice
  • 2 cups Water
  • 3 tablespoons Fresh Lemon Juice
  • 1 tablespoon Fresh Lemon Zest
  • 2 tablespoons Olive Oil
  • 1 medium Avocado
  • 2 cups Fresh Spinach Leaves
  • 4 tablespoons Chopped Walnuts
  • To Taste Salt and Pepper

Instructions:

  1. In a medium saucepan, bring the water to a boil. Add the brown rice, reduce to a simmer, cover, and cook until the rice is tender, about 15-20 minutes.
  2. While the rice is cooking, in a small bowl, whisk together the fresh lemon juice, lemon zest, and olive oil.
  3. Chop the avocado, and prepare the spinach leaves by cleaning and drying them.
  4. Once the rice is done, fluff it with a fork, and then stir in the lemon-oil mixture. Season with salt and pepper to taste.
  5. Divide the rice into bowls, top with the spinach leaves, chopped avocado, and sprinkle with the chopped walnuts. Serve immediately.
