
Lemon Rice Breakfast Bowl

Ingredients:
- 1 cup Brown Rice
- 2 cups Water
- 3 tablespoons Fresh Lemon Juice
- 1 tablespoon Fresh Lemon Zest
- 2 tablespoons Olive Oil
- 1 medium Avocado
- 2 cups Fresh Spinach Leaves
- 4 tablespoons Chopped Walnuts
- To Taste Salt and Pepper
Instructions:
- In a medium saucepan, bring the water to a boil. Add the brown rice, reduce to a simmer, cover, and cook until the rice is tender, about 15-20 minutes.
- While the rice is cooking, in a small bowl, whisk together the fresh lemon juice, lemon zest, and olive oil.
- Chop the avocado, and prepare the spinach leaves by cleaning and drying them.
- Once the rice is done, fluff it with a fork, and then stir in the lemon-oil mixture. Season with salt and pepper to taste.
- Divide the rice into bowls, top with the spinach leaves, chopped avocado, and sprinkle with the chopped walnuts. Serve immediately.
