Lean Beef Teriyaki Stir-fry

Ingredients:

  • 500 grams Lean beef strips
  • 1/2 cup Teriyaki sauce
  • 2 cloves Garlic
  • 2 tbsps Ginger root
  • 2 whole Bell peppers
  • 2 cups Broccoli florets
  • 2 whole Carrots
  • 2 tbsps Sesame oil
  • 4 cups Cooked brown rice

Instructions:

  1. To marinate the beef: In a bowl, combine beef strips, garlic, ginger root, and teriyaki sauce. Cover and put in refrigerator for 30 minutes.
  2. Heat sesame oil in large pan or wok over medium-high heat. Add marinated beef and stir-fry for about 5-7 minutes until browned and cooked through. Remove beef and set aside.
  3. In the same pan, add bell peppers, broccoli, and carrots. Stir-fry for about 5-7 minutes until vegetables are crisp-tender.
  4. Return beef to the pan and mix well. Cook for another 2 minutes.
  5. Serve the stir-fry over the cooked brown rice.
