
Late Night Veggie Stir-Fry

Ingredients:
- 1 cup Broccoli florets
- 1 large Carrot
- 1 large Bell pepper
- 0.5 cup Snow peas
- 2 cloves Garlic
- 2 tablespoons Low sodium soy sauce
- 1 tablespoon Olive Oil
Instructions:
- Chop all the vegetables into bite-sized pieces and mince the garlic.
- Heat the olive oil in a wok or large frying pan over medium-high heat.
- Add the garlic and stir-fry for a minute until it is lightly browned.
- Add the harder vegetables (broccoli and carrot) and stir-fry for a few minutes.
- Add the bell pepper and snow peas, stir well and continue stir-frying for another few minutes until all the vegetables are cooked but still crisp.
- Drizzle with the soy sauce and stir well for about a minute until everything is well coated.
- Remove from heat and serve hot.
