Late Night Veggie Stir-Fry

Ingredients:

  • 1 cup Broccoli florets
  • 1 large Carrot
  • 1 large Bell pepper
  • 0.5 cup Snow peas
  • 2 cloves Garlic
  • 2 tablespoons Low sodium soy sauce
  • 1 tablespoon Olive Oil

Instructions:

  1. Chop all the vegetables into bite-sized pieces and mince the garlic.
  2. Heat the olive oil in a wok or large frying pan over medium-high heat.
  3. Add the garlic and stir-fry for a minute until it is lightly browned.
  4. Add the harder vegetables (broccoli and carrot) and stir-fry for a few minutes.
  5. Add the bell pepper and snow peas, stir well and continue stir-frying for another few minutes until all the vegetables are cooked but still crisp.
  6. Drizzle with the soy sauce and stir well for about a minute until everything is well coated.
  7. Remove from heat and serve hot.
