Ingredients:
- 2 tablespoon Olive oil
- 1 large, chopped Onion
- 1 large, sliced Zucchini
- 2 large, chopped Bell peppers
- 3 minced Garlic cloves
- 1 can (15 oz) Canned diced tomatoes
- 1 cup shredded Cheddar cheese
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C).
- Heat olive oil in a large skillet over medium heat. Once hot, add onion, zucchini, bell peppers, and garlic. Sauté until vegetables are soft, about 10 minutes.
- Stir in the diced tomatoes, then season with salt and pepper. Let the mixture simmer for 5 minutes.
- Pour the vegetable mixture into a baking dish. Top evenly with the shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
