Ingredients:

  • 2 tablespoon Olive oil
  • 1 large, chopped Onion
  • 1 large, sliced Zucchini
  • 2 large, chopped Bell peppers
  • 3 minced Garlic cloves
  • 1 can (15 oz) Canned diced tomatoes
  • 1 cup shredded Cheddar cheese
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Once hot, add onion, zucchini, bell peppers, and garlic. Sauté until vegetables are soft, about 10 minutes.
  3. Stir in the diced tomatoes, then season with salt and pepper. Let the mixture simmer for 5 minutes.
  4. Pour the vegetable mixture into a baking dish. Top evenly with the shredded cheddar cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
