Late Night Vegetable Soba Noodle Bowl

Ingredients:

  • 100 grams soba noodles
  • 500 milliliters vegetable broth
  • 1 tablespoon soy sauce
  • 1 cup shredded carrots
  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1 clove crushed garlic
  • 2 stalks sliced green onion

Instructions:

  1. Cook the soba noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable broth in a large pot and bring to a boil. Add soy sauce and garlic, then reduce heat and let simmer.
  3. Add the carrots, broccoli, bell peppers, and mushrooms into the broth. Let the vegetables cook until they're tender.
  4. Add the cooked soba noodles to the pot and stir until well combined with the vegetables and broth.
  5. Serve the soba noodle bowl in individual bowls, garnish with sliced green onions. Enjoy your healthy and satisfying midnight snack!
