
Late Night Vegetable Soba Noodle Bowl

Ingredients:
- 100 grams soba noodles
- 500 milliliters vegetable broth
- 1 tablespoon soy sauce
- 1 cup shredded carrots
- 1 cup chopped broccoli
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1 clove crushed garlic
- 2 stalks sliced green onion
Instructions:
- Cook the soba noodles according to package instructions, then drain and set aside.
- Heat the vegetable broth in a large pot and bring to a boil. Add soy sauce and garlic, then reduce heat and let simmer.
- Add the carrots, broccoli, bell peppers, and mushrooms into the broth. Let the vegetables cook until they're tender.
- Add the cooked soba noodles to the pot and stir until well combined with the vegetables and broth.
- Serve the soba noodle bowl in individual bowls, garnish with sliced green onions. Enjoy your healthy and satisfying midnight snack!
