Late Night Vegetable Biryani

Ingredients:

  • 1 cup Basmati Rice
  • 2 cups Mixed Vegetables (carrots, peas, bell peppers)
  • 1 medium size Onion
  • 3 cloves Garlic Cloves
  • 1 piece Green Chili
  • 2 tablespoons Biryani Masala Powder
  • 1/4 cup Yogurt
  • 3 tablespoons Oil
  • 1/2 cup Mint Leaves
  • to taste Salt

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. Heat 1 tablespoon of oil in a pan, add the whole spices and sauté for a minute until they release their aroma.
  3. Add sliced onions, minced garlic, and chopped green chili. Sauté till onions turn golden brown.
  4. Next, add the mixed vegetables and cook for a few minutes until they are half cooked.
  5. Stir in the Biryani masala powder and salt, then add yogurt and cook until oil separates.
  6. Add the drained rice and 2 cups of water; bring to a boil. Cover the pan and cook on low heat for 20 minutes or until the rice is cooked and all the water is absorbed.
  7. Once done, fluff up the rice gently with a fork. Top the Biryani with mint leaves.
  8. Serve hot with raita or any side dish of your choice. Enjoy your Late Night Vegetable Biryani!
