
Late Night Vegetable Biryani

Ingredients:
- 1 cup Basmati Rice
- 2 cups Mixed Vegetables (carrots, peas, bell peppers)
- 1 medium size Onion
- 3 cloves Garlic Cloves
- 1 piece Green Chili
- 2 tablespoons Biryani Masala Powder
- 1/4 cup Yogurt
- 3 tablespoons Oil
- 1/2 cup Mint Leaves
- to taste Salt
Instructions:
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- Heat 1 tablespoon of oil in a pan, add the whole spices and sauté for a minute until they release their aroma.
- Add sliced onions, minced garlic, and chopped green chili. Sauté till onions turn golden brown.
- Next, add the mixed vegetables and cook for a few minutes until they are half cooked.
- Stir in the Biryani masala powder and salt, then add yogurt and cook until oil separates.
- Add the drained rice and 2 cups of water; bring to a boil. Cover the pan and cook on low heat for 20 minutes or until the rice is cooked and all the water is absorbed.
- Once done, fluff up the rice gently with a fork. Top the Biryani with mint leaves.
- Serve hot with raita or any side dish of your choice. Enjoy your Late Night Vegetable Biryani!
