
Late-night Ratatouille

Ingredients:
- 1 piece Eggplant
- 1 piece Zucchini
- 1 piece Bell Pepper
- 1 piece Onion
- 2 cloves Garlic Cloves
- 2 pieces Tomatoes
- 3 tbsp Olive Oil
- handful Basil leaves
- to taste Salt
- to taste Black Pepper
Instructions:
- 1. Cut the eggplant, zucchini, bell pepper, onion, and tomatoes into bite-sized pieces.
- 2. Finely chop the garlic cloves and basil leaves.
- 3. Heat the olive oil in a large pan over medium heat.
- 4. Add the onions and garlic to the pan and cook until they become soft.
- 5. Add the eggplant, zucchini, and bell pepper to the pan. Cook for about 10 minutes until they start to soften.
- 6. Add the chopped tomatoes, basil leaves, salt, and pepper. Stir well.
- 7. Cover and simmer for about 20 minutes. Stir occasionally.
- 8. Check the seasoning and adjust the salt and pepper if needed. Cook for another 5 to 10 minutes.
- 9. Serve the ratatouille warm. Enjoy your healthy, delightful midnight snack!
