Late-night Ratatouille

Ingredients:

  • 1 piece Eggplant
  • 1 piece Zucchini
  • 1 piece Bell Pepper
  • 1 piece Onion
  • 2 cloves Garlic Cloves
  • 2 pieces Tomatoes
  • 3 tbsp Olive Oil
  • handful Basil leaves
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. 1. Cut the eggplant, zucchini, bell pepper, onion, and tomatoes into bite-sized pieces.
  2. 2. Finely chop the garlic cloves and basil leaves.
  3. 3. Heat the olive oil in a large pan over medium heat.
  4. 4. Add the onions and garlic to the pan and cook until they become soft.
  5. 5. Add the eggplant, zucchini, and bell pepper to the pan. Cook for about 10 minutes until they start to soften.
  6. 6. Add the chopped tomatoes, basil leaves, salt, and pepper. Stir well.
  7. 7. Cover and simmer for about 20 minutes. Stir occasionally.
  8. 8. Check the seasoning and adjust the salt and pepper if needed. Cook for another 5 to 10 minutes.
  9. 9. Serve the ratatouille warm. Enjoy your healthy, delightful midnight snack!
