Late Night Mexican Fried Rice

Ingredients:

  • 2 cups Cooked Rice
  • 1/2 cup Onion
  • 1/2 cup Green bell pepper
  • 1 cup Black beans
  • 1/2 cup Corn
  • 1 cup Tomato
  • 1 whole Avocado
  • 2 tablespoons Cilantro
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • 1 tablespoon Mexican spice blend
  • to taste Salt
  • to taste Pepper

Instructions:

  1. In a large skillet heat the olive oil over medium-high heat.
  2. Add the onions and bell peppers, sauté until they are softened and lightly browned about 5 minutes.
  3. Add the beans, corn, and tomatoes to the skillet, cook for another 2-3 minutes until they are heated through.
  4. Add the cooked rice to the skillet, and season with the Mexican spice blend, salt, and pepper.
  5. Stir the rice mixture until it is evenly mixed and heated through, about 2-3 minutes.
  6. Remove the skillet from heat and add the avocado, cilantro, and lime juice, stir until everything is well mixed.
  7. Serve immediately and enjoy your late night Mexican Fried Rice.
