
Late Night Mexican Fried Rice

Ingredients:
- 2 cups Cooked Rice
- 1/2 cup Onion
- 1/2 cup Green bell pepper
- 1 cup Black beans
- 1/2 cup Corn
- 1 cup Tomato
- 1 whole Avocado
- 2 tablespoons Cilantro
- 2 tablespoons Lime Juice
- 2 tablespoons Olive Oil
- 1 tablespoon Mexican spice blend
- to taste Salt
- to taste Pepper
Instructions:
- In a large skillet heat the olive oil over medium-high heat.
- Add the onions and bell peppers, sauté until they are softened and lightly browned about 5 minutes.
- Add the beans, corn, and tomatoes to the skillet, cook for another 2-3 minutes until they are heated through.
- Add the cooked rice to the skillet, and season with the Mexican spice blend, salt, and pepper.
- Stir the rice mixture until it is evenly mixed and heated through, about 2-3 minutes.
- Remove the skillet from heat and add the avocado, cilantro, and lime juice, stir until everything is well mixed.
- Serve immediately and enjoy your late night Mexican Fried Rice.
