Late Night Italian Baked Fish

Ingredients:

  • 2 pieces White fish fillets
  • 1 cup Cherry tomatoes
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • handful Fresh basil leaves
  • 1 whole Lemon
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Drizzle half the olive oil on a baking tray. Place the fish on the tray.
  3. Slice the garlic cloves into thin pieces and distribute over the fish. Squeeze the lemon over the fish and season with salt and pepper.
  4. Scatter the cherry tomatoes and basil leaves around the fish. Drizzle the remaining olive oil on top.
  5. Bake for 20 minutes, or until the fish is cooked through and the tomatoes are slightly charred.
  6. Serve warm directly from the oven with extra lemon wedges on the side.
