Late Night Healthy Seafood Fried Rice

Ingredients:

  • 1 cup Long grain rice
  • 200 grams Mixed seafood
  • 2 units Egg
  • 1 cup Green peas
  • 1 unit Carrot
  • 2 stalks Spring onions
  • 3 units Garlic cloves
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions:

  1. Cook the rice as per package instructions and set it aside to cool.
  2. Meanwhile, heat some oil in a pan and stir fry the seafood for 2-3 minutes until cooked. Remove from pan and keep aside.
  3. In the same pan, add some more oil and stir fry the minced garlic till golden. Then add the carrots and peas, stir frying until they soften.
  4. Break the eggs into the pan. Scramble the eggs and cook till they're fully done.
  5. Add the cooked rice, seafood, soy sauce, sesame oil, salt, and pepper into the pan. Mix well and stir fry for a few minutes.
  6. Turn off the heat, toss in the chopped spring onions and give it a final stir.
