
Late Night Healthy Seafood Fried Rice

Ingredients:
- 1 cup Long grain rice
- 200 grams Mixed seafood
- 2 units Egg
- 1 cup Green peas
- 1 unit Carrot
- 2 stalks Spring onions
- 3 units Garlic cloves
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions:
- Cook the rice as per package instructions and set it aside to cool.
- Meanwhile, heat some oil in a pan and stir fry the seafood for 2-3 minutes until cooked. Remove from pan and keep aside.
- In the same pan, add some more oil and stir fry the minced garlic till golden. Then add the carrots and peas, stir frying until they soften.
- Break the eggs into the pan. Scramble the eggs and cook till they're fully done.
- Add the cooked rice, seafood, soy sauce, sesame oil, salt, and pepper into the pan. Mix well and stir fry for a few minutes.
- Turn off the heat, toss in the chopped spring onions and give it a final stir.
