
Late Night Grilled Chicken Salad

Ingredients:
- 1 piece Chicken breast
- 2 cups Mixed salad greens
- 5 pieces Cherry tomatoes
- 1/4 piece Cucumber
- 1/4 piece Carrot
- 1 tbs Olive oil
- 1/2 lemon Lemon juice
- to taste Salt and pepper
Instructions:
- Season the chicken breast generously with salt and pepper. Heat up a grill pan and cook the chicken on each side for about 3-4 minutes or until fully cooked. Once done, let it rest for a few minutes and then cut into thin slices.
- In a large bowl, combine the salad greens, cherry tomatoes, thinly sliced cucumber and carrot.
- Prepare the dressing by whisking together olive oil, juice of half a lemon, salt and pepper.
- Drizzle the dressing over the salad, add the grilled chicken slices on top. Toss well to combine.
- Serve immediately for best taste and enjoy this light and healthy midnight craving!
