Late Night Grilled Chicken Salad

Ingredients:

  • 1 piece Chicken breast
  • 2 cups Mixed salad greens
  • 5 pieces Cherry tomatoes
  • 1/4 piece Cucumber
  • 1/4 piece Carrot
  • 1 tbs Olive oil
  • 1/2 lemon Lemon juice
  • to taste Salt and pepper

Instructions:

  1. Season the chicken breast generously with salt and pepper. Heat up a grill pan and cook the chicken on each side for about 3-4 minutes or until fully cooked. Once done, let it rest for a few minutes and then cut into thin slices.
  2. In a large bowl, combine the salad greens, cherry tomatoes, thinly sliced cucumber and carrot.
  3. Prepare the dressing by whisking together olive oil, juice of half a lemon, salt and pepper.
  4. Drizzle the dressing over the salad, add the grilled chicken slices on top. Toss well to combine.
  5. Serve immediately for best taste and enjoy this light and healthy midnight craving!
