
Late Night French Fruit Tart

Ingredients:
- 1.5 cups all-purpose flour
- 0.75 cup unsalted butter
- 0.5 cup sugar
- 1 unit large egg yolk
- 2 cups mixed fruits (like berries, sliced apples, peaches, or plums)
- 2 tablespoons apricot jam
Instructions:
- In a bowl, mix the flour, sugar, and a pinch of salt. Add the butter and rub it into the flour using your fingers until crumbly. Add the egg yolk and mix until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat your oven to 375°F (190°C). On a floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom of the dough with a fork.
- Arrange the mixed fruits on top of the dough. Bake for 25 minutes, or until the crust is golden and the fruits are soft.
- Heat the apricot jam with a splash of water until smooth, then brush over the hot tart. Let cool before serving.
