Late Night French Fruit Tart

Ingredients:

  • 1.5 cups all-purpose flour
  • 0.75 cup unsalted butter
  • 0.5 cup sugar
  • 1 unit large egg yolk
  • 2 cups mixed fruits (like berries, sliced apples, peaches, or plums)
  • 2 tablespoons apricot jam

Instructions:

  1. In a bowl, mix the flour, sugar, and a pinch of salt. Add the butter and rub it into the flour using your fingers until crumbly. Add the egg yolk and mix until the dough comes together.
  2. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Preheat your oven to 375°F (190°C). On a floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom of the dough with a fork.
  4. Arrange the mixed fruits on top of the dough. Bake for 25 minutes, or until the crust is golden and the fruits are soft.
  5. Heat the apricot jam with a splash of water until smooth, then brush over the hot tart. Let cool before serving.
