
Late Night Coq Au Vin Blanc with Fish

Ingredients:
- 2 White fish fillets
- 2 cups White wine
- 2 cloves Garlic cloves
- 1 sprig Fresh thyme
- 2 tbsp Unsalted butter
- 1 cup Chicken stock
- 2 Shallots
- to taste Salt and Pepper
Instructions:
- Pat the fish fillets dry and season them with salt and pepper.
- Melt 1 tbsp of butter in a skillet over medium heat. Add the fish fillets and sear them until they are golden brown. Remove the fish from the skillet and set it aside.
- Add the remaining butter to the skillet. Add the shallots, garlic, and thyme, and cook until the shallots are soft.
- Pour in the white wine and chicken stock. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for 15 minutes.
- Return the fish to the skillet, baste with the sauce, and let it simmer for another 5 minutes, until the fish is cooked through.
- Serve hot, with the sauce poured over the fish. Perfect for a comforting late-night dish.
