Late Night Coq Au Vin Blanc with Fish

Ingredients:

  • 2 White fish fillets
  • 2 cups White wine
  • 2 cloves Garlic cloves
  • 1 sprig Fresh thyme
  • 2 tbsp Unsalted butter
  • 1 cup Chicken stock
  • 2 Shallots
  • to taste Salt and Pepper

Instructions:

  1. Pat the fish fillets dry and season them with salt and pepper.
  2. Melt 1 tbsp of butter in a skillet over medium heat. Add the fish fillets and sear them until they are golden brown. Remove the fish from the skillet and set it aside.
  3. Add the remaining butter to the skillet. Add the shallots, garlic, and thyme, and cook until the shallots are soft.
  4. Pour in the white wine and chicken stock. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for 15 minutes.
  5. Return the fish to the skillet, baste with the sauce, and let it simmer for another 5 minutes, until the fish is cooked through.
  6. Serve hot, with the sauce poured over the fish. Perfect for a comforting late-night dish.
